Delicious Anthill Caramel Cake Recipe

Anthill is a traditional Russian dessert (called “Muraveinik” in Russian), especially popular in the Soviet Union epoch of the country, when many families couldn’t afford baking those expensive cakes made from many ingredients for their children, and invented this quite strange, yet absolutely tasty sweet treat, which has become a big favorite ever since then. It usually has the form of an ant hill (hence the name), however, you can also try to be more creative and make it in the shape of small cupcakes or balls, for instance, or go simpler and add the mass into a flat cake form and then cut it into square shapes, which is what we have done here in our tutorial.

Some people usually add walnuts, chocolate or dry fruits to the mass (however, it’s not a must), at the end sprinkling some poppy seeds over it to give a more realistic ant hill look to the cake, however, you can stick to the simplest and most basic Anthill cake recipe that we want to present here. It, actually, requires very little (both in terms of the ingredients and the efforts), however, the result is something heavenly and uber-yummy.

• 1 egg
• 100 g melted butter
• 100 g sugar
• 6 tablespoons milk
• 1 teaspoon baking powder
• Vanilla
• 330 g plain flour, sifted

Cream Ingredients:

• 100 g butter
• 1 can cooked condensed milk/ tin caramel

Step 1: Combine the butter and sugar in a bowl and beat it until getting a smooth paste. Add the egg and continue beating. Next, add the baking powder into the milk and add this to the mixture. Add the vanilla to give a soft flavor to the dough. Sift in the flour and knead the dough to get a smooth texture. Note the dough shouldn’t be runny, so if you feel the need, add some more flour and knead it well until getting the consistency of stiff cookie dough. You need to make four balls from the entire mass, cover them with a plastic wrap and put them in the fringe for 1-2 hours, letting the dough harden.

Step 2: Preheat the oven to 180 C. Take out one of the dough balls and carefully grate it, spreading the bits evenly on a large baking tray, not forgetting about using a parchment paper. Bake it in the oven for some 15 minutes, until getting a slightly golden color. Remove it from the oven and let it cool. Then you need to break the cooled bits of the cake (they may be stuck to each other) and place them in a large bowl. Repeat these steps for the remaining three dough balls too.

Step 3: To make the cream, you either need a ready-made cooked condensed milk or you can boil ordinary condensed milk in its own can in a bowl of water (make sure the can is always fully submerged in water throughout the process, adding some more water if needed) for some 2 hours, let it cool and there you have the milk caramel (dulce de leche).

Step 4: Beat the butter for the cream till light and fluffy. Beat in the caramel milk until getting a smooth mixture.

Step 5: Add the cooled bits of the cake into the bowl of the cream and carefully mix them together well. Pour the entire mixture into your favorite mould (the shape doesn’t really matter), firmly patting down the cake with a tablespoon. Cover it with a plastic wrap and place the cake in the refrigerator, letting it stay there for at least 4 hours (or else the cake will crash when cutting it) or overnight if you can really wait. You need to serve the cake cold with some tea or coffee.

As you see the methods of baking this cake significantly different from those of preparing traditional cakes. This dessert is both simple and delicious! We are more than sure that your friends, your children and you will instantly fall in love with the delicate sweet taste of this Anthill cake!
